Ingredients (for 1 burger - multiple by how many burgers you need)
1/2 block of good quality tofu (sliced horizontally through the middle)
1 30g sachet Wild Fennel Co. Duck seasoning
1 tbsp chopped red chilli
1 spring onion
2 tbsp sesame oil
1 sprig of fresh mint (chopped)
1/2 avocado sliced
1 tbsp aioli
1 brioche bun
To prepare the salad, slice the cucumber and spring onion finely. Mix in a bowl with the sesame oil, chopped mint and red chilli and put to one side. Season with a little pinch of the Wild Fennel Co. duck seasoning.
To fry the tofu slice it though the middle horizontally and pat dry with a paper towel to avoid a mini oil explosion when it hits the pan. Heavily coat the tofu with the Wild Fennel Co. seasoning on all sides and place in a medium to hot pan with a little oil to fry. Make sure to turn the tofu throughout cooking to avoid burning and to get maximum caramelisation.
To assemble, toast your brioche bun briefly under the grill, remove and butter both halves. Place tofu on the base, then the sliced avocado, a good helping of aioli, followed by a large amount of the prepared salad. Serve and enjoy!
