At Wild Fennel, we’re welcoming the season with bright plates, simple ingredients and plenty of flavour. Think asparagus with a little char, tender fish with a squeeze of lemon, and beautifully seasoned lamb served with a generous bowl of greens.

Whether you’re cooking a quick dinner or gathering friends for Sunday lunch, here are three delicious ways to bring spring to your table. We're the chef in your kitchen

Spring vegetables deserve a little attention. Asparagus, peas and tender leafy greens bring colour and freshness to a meal, and they don’t need much fuss to taste wonderful.

For an easy side, toss asparagus or broccolini with olive oil and a little Wild Fennel Green Vegetable Seasoning, then roast or grill until just tender. Finish with lemon zest and serve straight away.

Or make your greens the meal: pile them onto warm couscous, add crumbled feta and toasted seeds, and finish with a squeeze of lemon. It’s an easy lunch that’s equally lovely shared outside on a sunny afternoon.

Try it this spring: a warm salad of asparagus, peas and new potatoes, tossed with olive oil, Green Vegetable Seasoning and fresh mint. Start with a little seasoning, taste, and add more to suit.

There’s something lovely about a seafood dinner that comes together with very little effort. A fillet of fish, a hot pan and a crisp green salad can be all you need.

Brush white fish with olive oil, add a little Wild Fennel White Fish Seasoning and pan-fry until cooked through. Serve with buttery new potatoes and lemon wedges for squeezing over at the table.
